Georgalas was drawn to the success stories and challenges that Dave shared, along with his admission of making every mistake in the book in the last 50 years but learning from them to build a successful business. Daddy’s first flagship location in Houston was designed to showcase to potential franchisees the “biggest, saddest thing you could have.” While most of Daddy’s places will be inline or endcap, around 25 percent will be standalone.

Webb’s initial inspiration for Daddy’s came from developing a fried chicken sandwich with sriracha mayo, Thai-style slaw, buttermilk fried chicken, and a brioche bun for an event in 2013. The food was a hit, drawing a crowd and even getting the approval of Mandy Moore. After that, Webb casually mentioned to her dad that she had a retirement plan of opening a chicken shack named Daddy’s, where they could serve fried chicken and hang out in Venice Pier wearing Hawaiian shirts.

Webb’s father, an artist and graphic designer, later helped craft the Houston location’s interior alongside Harrison, a global consultancy company. The result was an authentic-looking shack that incorporates elements of a house, such as windows of different sizes and a hanging door in the dining room.

The aesthetic is a fusion of the American South with Japanese minimalism. Georgalas was impressed with Webb’s fried chicken sandwich when he first tried it in 2015 and believed that she had found her Shake Shack. He suggested they should do something with the idea, to which Webb responded by indicating that he should do it with her.
